Coppa  is a traditional Italian cold cut  made from dry-cured pork shoulder or neck.  It is similar to the more widely known prosciutto, and can be used in similar dishes. However, coppa is not brined as ham typically is. Waterloo Cottage Farm cure and dry this ham themselves.
