If no tenderloins are available we will give an alternative of pork loin (no fat). There are only 2 tenderloins per whole pig and it has become very popular. Pork is the meat that has been most compromised by intensive factory farming methods and selective breeding. That's why so much of what's on offer is dry and characterless. We breed traditional native breeds of high welfare British pigs, which have a wonderful flavour. They have an essential covering of fat and a succulent, creamy meat.
Free range lean fillet of pork. The fillet steak of the pig is great for a quick pan fry, or a fast cook in the oven. 200g will feed 2 people, and 400g will feed 4 people.
